INGREDIENTS

  • 3-4 tablespoons Pro-Matrix Naked Whey Protein
  • ½ cup almond meal
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 eggs, lightly beaten
  • 3 tablespoons milk
  • coconut oil for frying
  • extra toppings: natural yoghurt, blueberries, coconut flakes, cinnamon
  • honey (optional) 

METHOD

  1. Combine all dry ingredients in a bowl
  2. Add eggs and milk
  3. Heat coconut oil in a frying pan on low/medium heat. Add pancake batter in batches until pancakes are cooked through and golden on both sides
  4. Add pancake topping, add honey for extra sweetness
