Why making the right choice
of dietary protein can make the
difference between building and destroying your body.
Making the right choice of dietary
protein is critically important
for all life functions including growth and fat burning. Proteins
serve as building blocks for all living cells. They're the
substrate for numerous functional compounds including enzymes,
hormones, neurotransmitters, growth factors, cellular receptors,
nucleic acids, proteoglycans and muscle fibers.
It's generally
accepted that in order to satisfy the body's metabolic demand for
amino acids, dietary protein should include all nine essential
amino acids in the right proportions. Foods that contain all the
essential amino acids are thereby regarded as complete protein
foods.
It has been commonly assumed that
complete protein foods, such as
animal foods, are superior to plant foods which are generally
regarded as incomplete protein sources. This is only partly true.
In fact, all complete protein foods such as animal foods are more
prone to degradation than incomplete protein foods such as beans
and nuts. Moreover, since most of our protein intake is derived
from animal sources, we often face the danger of unknowingly
consuming degraded or stale food.
There is one factor that is often
overlooked or ignored, however
critically important for evaluating protein quality. This one
hidden factor is often undetectable due to food processing,
chemical flavoring and preservatives, which together with smart
labeling, mask food's quality and one's ability to detect whether
it's good or bad.
This one most overlooked factor
that profoundly affects protein's
quality and therefore its capacity to build or destroy tissues is
protein freshness.
Fresh or live protein should
maintain all its amino acids and
peptides in their natural L configuration. It should also be free
of cross-linked damaged proteins as well as AGE proteins (Advanced
Glycation End products) - proteins that lose their
biological
integrity due to uncontrolled conjugation with sugar during
processing or exposure to high temperatures.
It is important also to understand
that proteins exist in two
mirror image configurations?the L-form (Levo)
and the D-form
(Dextro). For a yet unknown reason, all life forms on
this planet
(including the human body) consist almost exclusively of L
configuration proteins. However, when death occurs, a process known
as a racemization converts live L protein to a more
deadly D form.
In fact, aging is associated with an increased formation of D
proteins in the body's tissues. Recent studies reveal that
age-related brain diseases including Alzheimer's and Parkinson's
are associated with accumulation of D proteins.
D proteins may cause irreversible
damage to body tissues, adversely
affecting numerous metabolic functions. D proteins compete with L
proteins for cellular receptor binding, thereby interrupting
cellular communication as well as energy production, tissue
regeneration and growth.
Live organisms can protect
themselves from this kind of protein
degradation via special metabolic processes that prevent the
conversion of L proteins into their D form. One of the metabolic
processes, known as the ubiquitin system, also plays
a critical
role in muscular development, anti-aging and overall survival.
We'll discuss this at another time.
As for now, let's just say that
long storage time and over
processing may increase the risk of protein racemization
and the
formation of harmful D proteins. As early as Biblical times,
ancient people were aware of the superiority of young and fresh
food. They customarily sacrificed the youngest animals (lambs and
goats) and the first plant crops for God.
It's reasonable to conclude that
choosing fresh and possibly young
protein foods, would likely grant assimilation of amino acids and
peptides in their purest and highest biological form. Evidently,
there is no substitute for real fresh food. Note that smell and
taste should be the initial indicators to determine whether food is
fresh or stale. From that aspect, whey ricotta cheese is superior
to any powdered whey. Farmer cheese and cottage cheese are more
nourishing then any casein powder and soybeans (edamame)
are far
superior to soy protein isolate.
Finally, when choosing processed
protein products you should apply
the same principles of evaluation. Make sure that the product is
processed with high standards of quality control by a reliable
company that cares to offer fresh products, processed at low
temperatures and with minimal storage time.
Conclusions
1. Stay away from any protein food that has a funky smell and
taste
2. Avoid food or products that cause symptoms such as
indigestion,
nausea, bloating or headaches.
3. Choose younger animal foods due to superior protein
integrity.
From that aspect, veal is better than beef, baby lamb is better
than lamb, etc.
4. Combine animal food with plant protein foods. Due to a
relative
fast degradation of animal food, it is advisable to fortify foods
such as meat, dairy or eggs with plant protein foods such as beans
and nuts. Proper food combination can create a superior protein
quality with higher bioavailability and less damaged residues.
5. Introduce a variety of proteins and rotate among different
types of protein foods on a daily basis (such as a day of dairy
followed by a day of meat). Food rotation is a method that would
likely prevent food sensitivities, improve protein utilization,
support growth and regeneration and enhance overall performance.
Regardless of your New Year's
resolution, your knowledge and
instinctual wisdom are necessary for your survival. You can't
afford to be without either.
